Ingredients
  

1 1/2 cups (300 g) basmati rice
2 cups (200 g) mixed vegetables (carrot, beans, peas, capsicum)
1 large onion (100 g), sliced
1 tomato (100 g), chopped
2 tbsp (30 ml) oil
1 tsp (5 g) ginger-garlic paste
1/2 tsp (1 g) turmeric powder
1 tsp (2 g) red chili powder
1 tsp (2 g) garam masala
1 tsp (5 g) salt
2 cups (480 ml) water
5–6 fresh mint leaves
1 tbsp (15 g) chopped coriander leaves

Method
 

Wash rice and soak 20 min; drain.
    Heat oil, sauté onions until golden.
      Add ginger-garlic paste; cook 1–2 min.
        Add tomato, turmeric, chili, salt; cook 2–3 min.
          Add vegetables; stir fry 3–4 min.
            Add rice and water; cook covered 15–20 min until rice is fluffy.
              Sprinkle garam masala, mint, coriander; mix lightly.
                Serve hot with raita.
