Ingredients
  

1 cup (170 g) quinoa
2 cups (480 ml) water
1 cucumber (100 g), diced
1 tomato (100 g), diced
1/2 cup (60 g) corn
2 tbsp (30 ml) olive oil
1 tbsp (15 ml) lemon juice
Salt & pepper to taste

Method
 

Rinse quinoa; cook in water 15 min. Cool.
    Mix quinoa with cucumber, tomato, corn.
      Drizzle olive oil, lemon juice, salt, and pepper.
        Toss well; serve chilled.
