Ingredients:
200 g rice noodles
150 g shrimp or chicken
1/2 cup tofu cubes
2 eggs, lightly beaten
2 tbsp soy sauce
1 tbsp tamarind paste
1 tbsp fish sauce (optional)
1 tbsp brown sugar
1/4 cup roasted peanuts, crushed
1 spring onion, chopped
2 tbsp oil
Lime wedges for serving
Instructions:
- Soak noodles in warm water until soft.
- Heat oil, cook shrimp/chicken and tofu.
- Push aside, scramble eggs in same pan.
- Add noodles, sauces, sugar, toss well.
- Garnish with peanuts, spring onion, and lime.
