Ingredients
  

2 large eggs (100 g)
1/4 cup (30 g) chopped onion
1/4 cup (30 g) chopped tomato
1/4 cup (30 g) chopped bell pepper
1/4 tsp (1 g) salt
1/8 tsp (0.5 g) black pepper
1 tsp (5 ml) oil

Method
 

Beat eggs with salt and pepper.
    Heat oil in pan; sauté onion, tomato, bell pepper 1–2 min.
      Pour beaten eggs over vegetables.
        Cook 2–3 min until edges set; fold omelette.
          Serve hot.
