Ingredients
  

2 cups long-grain rice
1 onion, chopped
2 cups tomato puree
1 red bell pepper, blended
1 chili pepper, blended
2 cups chicken stock
2 tbsp vegetable oil
1 tsp thyme
1 tsp curry powder
Salt & pepper to taste

Method
 

Heat oil, sauté onion.
    Add blended pepper mix and tomato puree, cook until thick.
      Stir in rice, spices, and chicken stock.
        Cover and simmer until rice is cooked.
          Fluff with fork and serve with chicken or fish.
