Ingredients
  

2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 cup (200 g) short-grain rice
1 tsp saffron threads
2 cups (480 ml) chicken/seafood stock
150 g chicken breast, diced
150 g shrimp, peeled
100 g mussels (optional)
1/2 cup peas
1 red bell pepper, sliced
Salt & pepper to taste

Method
 

Heat olive oil, sauté onion and garlic.
    Add chicken, cook until lightly browned.
      Stir in rice, saffron, and stock.
        Add shrimp, mussels, peas, and bell pepper.
          Simmer until rice is tender and stock absorbed.
            Serve hot with lemon wedges.
