Ingredients
  

  • 250 g elbow macaroni
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk warm
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • ½ cup mozzarella cheese
  • ½ cup breadcrumbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika optional

Method
 

Cook Pasta: Boil macaroni in salted water until al dente. Drain and set aside.
    Make Roux: Melt butter in a saucepan. Add flour and whisk 1 minute.
      Add Milk & Cream: Slowly pour in warm milk and cream; whisk until smooth and thickened.
        Add Cheese: Mix in cheddar and mozzarella (reserve some for topping). Season with salt, pepper, and paprika.
          Combine: Add cooked pasta to sauce and stir well.
            Bake: Transfer to baking dish, sprinkle cheese and breadcrumbs. Bake at 180°C (350°F) for 15–20 min until golden.
