Ingredients
  

4 large onions, thinly sliced
3 tbsp butter
1 tbsp olive oil
4 cups (960 ml) beef broth
1 cup (240 ml) white wine (optional)
1 tsp thyme
Salt & pepper to taste
4 slices French bread
1 cup (100 g) grated Gruyère cheese

Method
 

Heat butter and olive oil in a pot, caramelize onions on low heat (20–25 mins).
    Add wine, broth, thyme, salt, and pepper. Simmer 15 mins.
      Pour soup into bowls, place toasted bread on top.
        Sprinkle with cheese, broil until melted.
          Serve hot and cheesy.
