Ingredients
  

For the Toast
  • 2 slices sourdough or multigrain bread
  • 1 ripe avocado
  • 1/4 cup chopped kimchi
  • 1 tbsp sesame oil
  • 1 tsp lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 tsp toasted sesame seeds
  • 1 tbsp chopped green onion
  • Optional Toppings
  • Chili flakes
  • Microgreens
  • A drizzle of honey

Method
 

  1. Toast the bread slices until crispy and golden.
  2. In a bowl, mash the avocado with lemon juice, salt, and black pepper.
  3. Spread the creamy avocado mixture evenly over both toast slices.
  4. Add chopped kimchi on top of the avocado.
  5. Drizzle a few drops of sesame oil for flavor.
  6. Sprinkle sesame seeds and garnish with green onions.
  7. Add optional toppings if you want extra spice or sweetness.
  8. Serve immediately for best texture.

Use fermented kimchi for strongest flavor.
Add a fried egg to convert it into a breakfast version.
