- Prepare Beef: Season sliced beef with salt and pepper.
- Sear the Beef: Heat olive oil in a skillet, cook beef in batches until browned. Remove and set aside.

- Make the Sauce: Sprinkle flour over mushrooms, stir well. Gradually pour in beef broth, stirring until thickened.
- Add Flavor: Stir in Dijon mustard and Worcestershire sauce. Reduce heat to low.
- Combine: Return beef to pan, add sour cream, and simmer gently for 5 minutes until creamy.
- Serve: Spoon over noodles or rice and garnish with parsley.
