Ingredients
  

For the Pie Crust:
  • 2 ½ cups 315 g all-purpose flour
  • 1 cup 230 g unsalted butter, chilled and cubed
  • 1 tsp salt
  • 1 tbsp sugar
  • 6 tbsp ice-cold water
For the Apple Filling:
  • 6 medium apples Granny Smith or Honeycrisp, peeled, cored, and sliced
  • ¾ cup 150 g sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tbsp unsalted butter cubed (for topping)

Method
 

  1. Prepare Pie Crust: Mix flour, sugar, and salt. Cut in butter until crumbly. Add ice water gradually until dough holds. Divide into two disks, wrap, and chill for 1 hour.
  2. Prepare Filling: In a bowl, toss sliced apples with sugar, cinnamon, nutmeg, flour, and lemon juice.
  3. Assemble Pie: Roll out one dough disk, line the pie dish, fill with apple mixture, and dot with butter. Cover with second crust, seal edges, and cut small vents.
  4. Bake: Brush top with milk or egg wash. Bake at 190°C (375°F) for 50 minutes or until golden brown.
  5. Cool: Allow to cool for at least 2 hours before slicing.

Notes

For best results, mix tart and sweet apples for flavor balance.
Add a tablespoon of caramel sauce over apples for a richer taste.
