- Prepare Batter:
- In a bowl, mix flour, baking powder, garlic powder, paprika, salt, and pepper.
- Combine:
- Add egg and milk. Mix until smooth.
- Add Corn:
- Fold in corn kernels, spring onions, and coriander. Batter should be thick.
- Heat Oil:
- Heat a little oil in a pan over medium heat.
- Cook Fritters:
- Drop spoonfuls of batter into the pan and flatten lightly.
- Cook 2–3 minutes per side until golden and crisp.
- Serve:
- Transfer to paper towels. Serve hot with spicy mayo or sour cream.

For extra crunch, add 2 tbsp cornflour.
