Ingredients
  

  • 1 cup sweet corn kernels fresh or frozen
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1/4 cup milk
  • 1/4 tsp baking powder
  • 1/4 cup finely chopped spring onions
  • 1/4 cup chopped coriander optional
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • Oil for shallow frying

Method
 

  1. Prepare Batter:
  2. In a bowl, mix flour, baking powder, garlic powder, paprika, salt, and pepper.
  3. Combine:
  4. Add egg and milk. Mix until smooth.
  5. Add Corn:
  6. Fold in corn kernels, spring onions, and coriander. Batter should be thick.
  7. Heat Oil:
  8. Heat a little oil in a pan over medium heat.
  9. Cook Fritters:
  10. Drop spoonfuls of batter into the pan and flatten lightly.
  11. Cook 2–3 minutes per side until golden and crisp.
  12. Serve:
  13. Transfer to paper towels. Serve hot with spicy mayo or sour cream.

Notes

💡Notes
For extra crunch, add 2 tbsp cornflour.
Add cheese for a cheesy fritter version.
Use chili flakes for a spicy kick.
