Ingredients
  

For the Chicken Mixture
  • 1 cup cooked shredded chicken
  • 3 tbsp mayonnaise
  • 1 tbsp fresh cream or Greek yogurt
  • 1 tbsp finely chopped onions
  • 1 tbsp chopped celery optional
  • 1 tbsp chopped parsley
  • 1 tsp lemon juice
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
For the Sandwich
  • 4 bread slices toasted or plain
  • 2 lettuce leaves
  • 4 tomato slices
  • 1 –2 cheese slices optional

Method
 

  1. Prepare the Chicken Mix:
  2. In a bowl, combine shredded chicken, mayonnaise, cream/yogurt, onions, parsley, celery, black pepper, salt, garlic powder, and lemon juice. Mix until smooth and creamy.
  3. Prep the Bread:
  4. Toast the bread slices lightly or keep them soft as preferred.
  5. Assemble:
  6. Place lettuce on one bread slice, add tomato slices, then spread a generous amount of creamy chicken mixture. Top with cheese if using.
  7. Finish:
  8. Cover with the second bread slice, press lightly, and cut diagonally.
  9. Serve:
  10. Serve fresh with fries or chips.

Notes

💡Notes
Greek yogurt gives a lighter, healthier version.
Add sweet corn or grated carrots for extra crunch.
Use whole wheat bread for a healthier sandwich.
