Ingredients
  

  • 2 large ripe-but-firm avocados
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • 2 tbsp grated parmesan optional but amazing
  • Oil spray for baking

Method
 

  1. Prep Avocados: Slice each avocado into thick wedges.
  2. Season Flour: Mix flour, salt, pepper, and paprika in a bowl.
  3. Set Breading:
  4. Bowl 1 → seasoned flour
  5. Bowl 2 → beaten eggs
  6. Bowl 3 → panko + parmesan
  7. Coat: Dip each avocado wedge in flour → egg → panko.
  8. Bake: Arrange on a lined tray, spray lightly with oil, and bake at 200°C (400°F) for 12–15 minutes until golden and crisp.
  9. Serve: Enjoy hot with spicy mayo or garlic yogurt dip

💡Notes
Use firm avocados so they hold shape.
Add chili flakes to panko for spicy fries.
