- Preheat Oven: Set oven to 190°C (375°F).
- Boil Potatoes: Add diced potatoes to salted water and boil until fork-tender (10–12 minutes). Drain well.
- Mash & Mix: In a large bowl, mash potatoes with butter, sour cream, milk, salt, pepper, and garlic powder. Stir in half the cheese and half the bacon.
- Bake: Transfer to baking dish, top with remaining cheese and bacon. Bake for 20 minutes until bubbly and golden.
- Garnish & Serve: Sprinkle chopped green onions before serving hot.

For extra creaminess, use heavy cream instead of milk.
You can add chopped jalapeños or sautéed onions for more flavor.
