Ingredients
  

  • 6 medium 900 g russet potatoes, peeled and diced
  • 1 cup 240 ml sour cream
  • ½ cup 120 ml milk
  • 3 tbsp unsalted butter
  • 1 ½ cups 150 g shredded cheddar cheese, divided
  • 4 strips cooked bacon crumbled
  • 2 green onions chopped
  • Salt and black pepper to taste
  • ½ tsp garlic powder optional

Method
 

  1. Preheat Oven: Set oven to 190°C (375°F).
  2. Boil Potatoes: Add diced potatoes to salted water and boil until fork-tender (10–12 minutes). Drain well.
  3. Mash & Mix: In a large bowl, mash potatoes with butter, sour cream, milk, salt, pepper, and garlic powder. Stir in half the cheese and half the bacon.
  4. Bake: Transfer to baking dish, top with remaining cheese and bacon. Bake for 20 minutes until bubbly and golden.
  5. Garnish & Serve: Sprinkle chopped green onions before serving hot.

Notes

💡Notes
For extra creaminess, use heavy cream instead of milk.
You can add chopped jalapeños or sautéed onions for more flavor.
