Ingredients
  

For the Salmon:
  • 2 salmon fillets about 180–200 g each
  • Salt and freshly ground black pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 lemon wedge for serving
For the Herb Sauce:
  • 2 tbsp unsalted butter
  • 2 garlic cloves minced
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped dill optional
  • 1 tbsp heavy cream or Greek yogurt for creaminess
  • Salt and pepper to taste

  • Non-stick or cast-iron skillet
  • Spatula
  • Small saucepan
  • Mixing spoon

Method
 

  1. Prepare the Salmon: Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper.
  2. Sear the Salmon: Heat olive oil and butter in a skillet over medium-high heat. Place salmon skin-side down and cook for 4–5 minutes until crisp.
  3. Flip and Finish: Gently flip and cook for another 3–4 minutes, until golden and cooked through. Transfer to a plate.
  4. Make the Herb Sauce: In a small saucepan, melt butter. Add garlic and sauté for 30 seconds until fragrant. Stir in lemon juice, parsley, dill, and cream. Cook for 1 minute, then season to taste.
  5. Serve: Pour the herb sauce over the salmon and serve hot with lemon wedges.

Notes

💡Notes
You can replace dill with basil or cilantro for a flavor twist.
For crispy skin, avoid moving the salmon while it’s searing.
