Ingredients
  

For the Marinade:
  • 1/4 cup olive oil
  • 3 tbsp red chili flakes or 2–3 fresh red chilies
  • 2 tbsp smoked paprika
  • 1 tbsp lemon juice
  • 1 tbsp white vinegar
  • 4 garlic cloves minced
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tsp salt
For the Chicken:
  • 1 kg chicken legs, thighs, or whole cut pieces
  • 1 tbsp butter for basting
Optional Garnish:
  • Fresh parsley
  • Lemon wedges

Equipment

  • Blender or food processor
  • Brush for basting
  • Grilled pan
  • Mixing bowl

Method
 

  1. Prepare Marinade:
  2. Blend together olive oil, red chilies, paprika, lemon juice, vinegar, garlic, oregano, salt, and pepper until smooth.
  3. Marinate Chicken:
  4. Coat the chicken pieces evenly with the Peri Peri sauce. Cover and marinate for at least 2 hours (overnight for best flavor).
  5. Cook the Chicken:
  6. Preheat grill or oven to 200°C (400°F). Grill or bake the chicken for 30–35 minutes, turning halfway and basting with butter.
  7. Finish:
  8. When cooked, brush once more with leftover marinade and grill for 3–5 minutes until slightly charred.
  9. Serve:
  10. Plate hot, garnish with parsley and lemon wedges.

Notes

💡Notes
Adjust chili according to your spice tolerance.
You can also air-fry the chicken at 180°C for 20–22 minutes.
Save some marinade for dipping sauce.
