Ingredients
  

4 large eggs
2 medium potatoes, thinly sliced
1 onion, thinly sliced
3 tbsp olive oil
Salt to taste

Method
 

Heat olive oil in a pan, fry potatoes and onion until tender.
    Beat eggs in a bowl, season with salt.
      Add fried potatoes and onion to eggs, mix well.
        Pour mixture back into pan, cook on low heat until set.
          Flip tortilla carefully, cook other side until golden.
