Ingredients
  

6 ripe tomatoes (about 600 g), chopped
1 onion, chopped
2 garlic cloves, minced
2 tbsp olive oil
2 cups (480 ml) vegetable broth
1/2 cup (120 ml) fresh cream
1/4 cup fresh basil leaves
Salt & pepper to taste

Method
 

Heat olive oil in a pan, sauté onion and garlic until fragrant.
    Add chopped tomatoes, cook until softened.
      Pour in vegetable broth, simmer for 15 mins.
        Blend mixture until smooth, return to pan.
          Stir in cream and fresh basil.
            Season with salt and pepper, serve hot.
